Food & Water Guidelines
The Codex Alimentarius is a collection of internationally adopted food standards, codes of practice, guidelines and recommendations. They have been created for the purpose of protecting the health of consumers and ensuring fair practices in the food trade.
Although these standards do not have statutory force, an increasing number of countries align their food standards with Codex. The standards are recognised in World Trade Organisation (WTO) agreements.
The Codex Alimentarius Commission (CAC) who produce these standards is an intergovernmental body jointly sponsored by the Food and Agriculture Organisation (FAO) and the World Health Organisation (WHO).
These links are to standards which underpin national legislation in many countries and is relevant to food safety in catering and food manufacturing operations.
